"Grace's favorite!"

Strawberry Angel Trifle

1 package white Angel Food Cake mix
5 cups fresh or frozen strawberries
1 6oz package strawberry Jello (may be diet Jello)
¼ cup white sugar (none need if frozen sweetened strawberries are used)
½ c. boiling water
1 small carton Nutriwhip (makes 1 litre)
¼ c. icing sugar
chopped nuts, optional

Prepare angel food cake mix according to package directions. Cool. Mash half the berries and combine to saucepan with Jello, sugar and boiling water. Heat gently just until dissolved. Chill until mixture slightly thickens.

Reserve a few whole berries for garnish and slice remainder into gelatin mixture. Beat Nutriwhip and icing sugar to stiff peaks. Tear cake into 1 inch pieces. Put half of the cake cubes into glass serving dish. Cover with half of Nutriwhip. Repeat layers. Garnish with reserved berries and chopped nuts, if desired. (If using frozen berries, place all into dissolved Jello and mixture will thicken almost immediately and be ready for layering).

Shortcake

2 cups flour (can be whole wheat)
4 tsp baking powder
1/2 tsp salt
2 T sugar
1/2 cup butter or margarine
3/4 cup milk or soyamilk

Mix flour, baking powder, salt and sugar. Cut in butter or margarine. Add milk. Mix like buscuits. Roll dough 1/2 inch thick or pat into greased pan. Bake at 400 degrees for 10-15 minutes.
